Let me make a little list of cool RPGs for the snes for you.

-Final Fantasy 3 and 5, well known but check them out if you haven't played them
-Terranigma, not really an RPG but close enough. It's an awesome game none the less
-Super Mario RPG, You've probably played it already, but it has some of the best graphics for SNES and it's like one of my favorite games of all time
-Secret of Mana, this game is really hard for me, I could never get all far really. Seem fun though.
-Lufia games, not really all that great but they're RPGs. If you want an RPG check them out.
-Breath of Fire games, made by capcom, they didn't hold my interest all that long but people seem to like them.
-Seiken Densetsu 3, this game is a lot like Secret of Mana. I'm sure it's a sequal to SoM.
-Tales of Phantasia, this game is good but the battle system can get a bit repeative after a long time playing (there's a lot of battles in the game).
-If you can find it Dragon Quest V and VI, you'll have to apply the translation patch yourself.

Google it! lol, its probably one of the most innovative games ever, with item creation and so on. You'll just have to give it a whirl! there is Star Ocean on the SNES, Star Ocean 2: The Second Story on the PSX and Star Ocean 3: Til the End of Time on the PS2. There is also a Star Ocean on the GBC, however I have not played it yet. I recommend starting off with SO2, then SO then SO3.

Sounds like you've played most of the English SNES RPG's.

So here's a list of what GameFAQS considers to be RPG's and stategy games for the SNES:

    http://www.gamefaqs.com/console/snes/list_rpg.html
    http://www.gamefaqs.com/console/snes/list_strategy.html

I included the Strategy list because alot of those games have RPG elements to them, and are fun to play too.

So, pick a game on that list, and if it's in Japanese, check these 2 lists to see if it's been fully translated to English yet:
    http://www.fantasyanime.com/garden/translations2.htm
    http://donut.parodius.com/?func=trans&platform=snes

And since you asked about PSX too:
    http://www.gamefaqs.com/console/psx/list_rpg.html
    http://www.gamefaqs.com/console/psx/list_strategy.html

There is currently only one Jap PSX RPG that is being translated (Tales of Phantasia) but so far no patch has been released.
But there are plenty of English PSX RPG's/Strategy games to play, if you haven't played them already.

Finally here are the Gameboy, GBC and GBA lists.

    Gameboy/GBC lists:
    http://www.gamefaqs.com/portable/gameboy/list_rpg.html
    http://www.gamefaqs.com/portable/gam..._strategy.html
    http://www.gamefaqs.com/portable/gbcolor/list_rpg.html
    http://www.gamefaqs.com/portable/gbc..._strategy.html

And the ones in Japanese that have been translated:
    http://donut.parodius.com/?func=trans&platform=gameboy

GBA lists (lots of games here too)
    http://www.gamefaqs.com/portable/gba.../list_rpg.html
    http://www.gamefaqs.com/portable/gba..._strategy.html

    Not too many translated yet:

I'm waiting for the ROM of this personally:

And yes, Star Ocean is amazing. I still need to play the first one, doesn't it need an English translation hack or was it released in English? Although hearing the voices in Star Ocean 2 makes me want to go all van Gogh on my ears.

    "When did they..."

I agree with Star Ocean. The whole item creation and battle system is damn awesome, you should try it.

Golden Sun 1+2 is a great RPG series on the GBA, you really ought to pick it up if you can find it.

On the seventh dawn of the seventh day a twice-blessed man will roam the fields. Doomed to shadows with his brethren, or saviour to all who walk the ground.

It was only released in Japanese, so you need a hack translation to play it. It isn't hard to find, since every ROM I found of it included the translation hack. As for the voices.....SO was just as annoying voice wise (of couse, the voices are Japanese, except the Intro). Luckily SO3 has the "remove battle voices" feature
